An Italian menu with sun-drenched flavours, the pleasure of this collaborative tasting menu begins with a unique aperitif and its accompanying antipasti.

Travelling from their cosy trattoria in San Giuseppe Vesuviano, Italy, Maturazioni’s brand founder Gabriella Esposito brings her skill for infusing her recipes with Italian culture and flavour to the city of Dubai for the first time.

Ranked Pizzerie Eccellenti 2024 by 50 Top Pizza, the social media sensation will grace our shores with the mission of spreading the gospel of good pizza and the many innovations coming out of the Italy-based pizzeria.

Maturazioni Pizzeria is known for their double-cooked doughs which are traditionally first fried and then baked, joined by their passion for high quality ingredients, guests can expect wedges of beautifully charred, wood-fired crust topped with premium ingredients such as San Marzano tomatoes, eggplant parmigiana, smoked black angus.

In their limited-edition menu at Bussola Pizzeria, regulars and newbies alike will be treated to some of Maturazioni’s viral dishes.

Beginning with the outstanding frittata of bucatini cacio e pepe, marinated tuna tartare the starter is a light introduction to the remaining four-course menu that promises to deliver savoury and sweet doughs until the end.

For the second course, enjoy the pizza al padellino ripieno, filled with smoked provola, eggplant parmigiana, and confit date tomatoes, topped with Parmigiano Reggiano ‘Vacche Rosse’.

Move on to the double-cooked pizza in due cotture, crispy and perfectly topped with San Marzano tomatoes, buffalo mozzarella, and basil.

For a modern twist, delight in the pizza contemporanea, where smoked Black Angus carpaccio, stracciatella, semi-dry tomatoes, and olive powder come together beautifully.

Conclude with a sweet pizza dolce in due cotture, layered with buffalo ricotta, apricot marmalade, and white chocolate.

On 23 October, the opening aperitivo night will kick off, where a live DJ will set the tone with Italian beats, creating the perfect backdrop for guests to enjoy authentic Italian bites.

The spotlight turns to the exclusive degustation menu available from 23 – 25 October, inviting diners to experience a curated four-course menu alongside Bussola Pizzeria’s beloved à la carte offerings. A Birra Moretti trolley will also be on hand, offering a selection of authentic Italian beers to perfectly pair with each dish.
