Some of the region’s best bartenders serve up Latin flair at SUSHISAMBA Dubai
If you’re in the mood for rhythm, flavour, and a little rooftop magic, SUSHISAMBA Dubai has you covered.
Perched 51 floors above The St. Regis Dubai, The Palm, the iconic venue is about to launch a four-night celebration of South America’s rich mixed drink culture, and it’s bringing some of the continent’s most exciting bars along for the ride.
Running from 10 to 13 September, the SUSHISAMBA South American Tour will feature nightly guest shifts from top bars across Mexico, Peru, Colombia, and Brazil, each bringing a signature vibe and flavour to the skies of Dubai.
Kicking Off in Mexico – 10 September
The journey begins with Arca Bar (Tulum, Mexico), ranked No.27 on North America’s 50 Best Bars 2025.
Visionaries Jose Luis Hinostroza and Carlos Mora Zapata will take over the bar with mixed drinks inspired by the Mayan jungle.
Hidden Gems from Peru – 11 September
Next up: Sastrería Martinez from Lima. Known for its speakeasy charm and Boardwalk Empire vibes.
This bar is helmed by Diego Macedo and specialises in precision-crafted mixed drinks with a local twist.

Colombian Cool – 12 September
Friday welcomes Mamba Negra from Medellín, a rooftop hotspot loved for its cheeky takes on modern classics.
Founder Juan David Zapata will bring bold, playful blends like the Not So Famous and Silent Words, alongside some famous Latin staples.
Brazil Brings the Finale – 13 September
To wrap up the tour, and celebrate Brazil’s National Caipirinha Day, SUSHISAMBA hosts none other than Fabio La Pietra, the creative genius behind Shiro & Caffè Anarcord.
Famed for his elegant fusion of Brazilian terroir with European finesse, La Pietra will shake up the bar with beautifully balanced, spirit-forward creations that close out the event in style.
What to expect
Each guest bartender will serve four standout mixed drinks, crafted specially for their one-night appearance.
These will be paired with three of SUSHISAMBA Dubai’s signature favourites, creating a dynamic, curated menu that evolves each night.
Add in the breathtaking 360° views from the 51st floor and a buzzing atmosphere, and you’ve got a one-of-a-kind celebration of Latin American spirit, culture, and artistry.
